Recipe | Semi Dried Tomato and Capsicum Pesto

Ingredients

1 small red chilli, stem removed, chopped finely
1/4 red capsicum, chopped finely
2 tbs hulled hemp seeds
1/2 cup pine nuts
1/2 cup semi dried tomatoes, drained and chopped finely
1 tbs hemp oil
1/4 tsp sea salt
1/4 tsp black pepper

METHOD

Place the pine nuts in a food processor and break down to a crumb.  Pour nuts into a bowl and add the rest of the ingredients.  Stir well and store in a sealed jar for up to a week.
